25l r/o water. Could only get mash ph to 5.7. Used fresh juice yeast cake. Running just under boiling with the rims at full and the propane just trickling evaporates fast. 2x!. 35 min boil.
Sub simcoe for mosaic. And MO for halcyon. 1/2 nanaimo city water and 1/2spring water. First water additions made PH worse by 0.7.
Used pilsen light base malt. 5 gallons fermented US05, 5 gallons fermented with Barbarian. Barbarian turned out extremely well - low bitterness, high hop flavor, creamy. Served at a neighborhood block party and even people who don't like IPAs couldn't get enough. Seems to have a broad appeal. Mashed in 2 separate batches using BIAB in a 15-gallon kettle. Combined 12.5 gallons wort back into 15-gallon kettle for boil.
