Brewed Saturday 3/20/21 Shooting for a 6.5-7% IPA with big white wine notes. Got GMO yeast from Mike - will use mostly that with some Imperial Juice (London Ale III) to round it out. Shoot for 1065ish and trying to create a bunch of unfermentable sugar with high mash temp and lots of Carapils. Mike says the GMO will add about 5% AA, so that would get me up to 78-80% - need to keep that down to keep ABV down and body/sweetness up. Mash at 158-160*. Adding 14g CaCl, 4g Epsom, 10g Lactic Acid ...

What Styles Are These Recipes?
It's not uncommon for a homebrewer to craft a homebrew recipe that does not satisfy the specific guidelines of the BJCP style guidelines. For example, a homebrewer might make an IPA recipe and decide they want it to be more bitter or darker than the defined style.
There are plenty of great homebrew recipes that fall into this category and they should not be overlooked.
