2.5 gal. grain absorption. Start with 8 gal water so you can cover the grains. PH can be high 4 or low 5. Add everything to brew bag. Multi-Rest Mashing: 104F, 140F (start raising ph to 5.5 carefully, 152/155F. Half hour rest at each temp. heat water to 114F and then mash in (it will bring the mash water down to 104F). Finally, mash out at 168 for 10 min.Take everything out of the water and set in drain basket to sparge. Sparge with enough water to get to 7 gal (about 1.5 gal.). Bring to boil. ...
