Special Instructions
- Mash at 147 for 1 hour with more strike water to use less sparge water
- Cool wort to 65 f and pitch yeast starter. ( oxygenate well )
- Keep primary fermentation at 62 until after high krausen.
- Raise temp to 70 f after high krausen for 2 days.
- Transfer to keg when F.G. is down to 1.010 and add gelatin for clarification.
- Carbonate to 3.5 volumes at 35 f.
